Ahhh…Summer breakfasts eaten outside in the garden, on deck as we sail along, in bed with a good book, or at the table on pretty linens while the sun streams in. I love Bircher Muesli as the days warm up; it’s cool, creamy and satisfying, I can prep it the night before and it’s there waiting for me in the morning! I made this one by combining apple juice and coconut yoghurt with Dorset Cereals’ Raspberry and Blackcurrant Bircher Mix, leaving it overnight to do its thing and then topping it with cherry coulis and baked cinnamon apples. Once I had taken its photo I scoffed the lot and, oh my word, the flavours! Sensational! Just gaze upon it for a moment….
Are you drooling? Just a little bit? I am and I’ve already eaten it! I could waffle on about how nutritious this is because it is full of wonderful natural ingredients but I see myself more as a purveyor of fine foods, bringing you the best from my kitchen and only sharing products which hit the spot. Breakfast for me has to taste good, fill me up nicely and set me up for the day and Dorset Cereals Bircher Muesli mix does just that.
Leaving it overnight makes for the simplest of breakfasts in the morning but, if you forget, Dorset Cereals have simplified the method with their fruity mixes using finely milled oats and dried fruit which means it can be soaked in as little as 30 minutes to be ready after you’ve showered and sorted the children out!
You can use this mix as the base for your favourite seasonal fruits, a scattering of nuts, a sprinkling of seeds or a mixture of all three. You can soak it overnight in milk of your choice for that characteristic creamy texture, or in apple juice for a sweeter fresh flavour. Or you can go wild like I did and do both; it is easy eating, light comfort food perfect for sunny days!
- 50 g Dorset Cereals Bircher Mix, I used raspberry and blackcurrant bircher mix
- 70 ml apple juice
- 50 g coconut yoghurt
- 2 - 3 tbsp almond milk, optional
- 200 g frozen cherries
- 1 tbsp water
- 1 dessert apple
- 1 tsp cinnamon
- 1 lemon, juiced
- 1/2 tbsp agave nectar/maple syrup
- 1 tbsp mixed seeds
Mix the bircher mix with the apple juice, spoon the yoghurt on top and leave overnight in the fridge.
Heat the frozen cherries with the water until defrosted, blend until smooth, return to a clean pan and simmer until thick enough to coat the back of a spoon. Leave to cool and refrigerate overnight.
Preheat the oven to 180C
In a bowl whisk together the lemon juice, agave nectar/maple syrup and cinnamon.
Slice the apple thinly and add to the lemon juice mixture, ensuring all the apples are coated.
Lightly grease a baking tray. Put the apple slices in a single layer on the tray and bake for 20 minutes, flipping them over halfway through. Bake until just beginning to brown and your kitchen smells appley. Cool and refrigerate.
In the morning, stir the yoghurt into the bircher mix. Add a little milk of your choice to thin if necessary (I used almond milk). Spoon on a little of the cherry coulis, top with apple slices and a sprinkle of mixed seeds.
Dorset Cereals Bircher Mix with Raspberry and Blackcurrant is crying out to be topped with all manner of seasonal fruits as they begin to ripen. I’m eyeing up my raspberries which are just beginning to swell, my redcurrants which are almost ripe and my cherries (if I can get to them before the birds this year). As summer marches into autumn my plums will take centre stage and then come the home grown apples taking us into colder days – seasonal eating at its best!
Overnight oats are such an easy way to do breakfast through the sunnier seasons. Pop some in the fridge on Sunday night for a simple, nutritious and delicious breakfast on Monday morning and you’re starting your week well! If you make my cherry coulis you will have plenty to top several bowls of Bircher Mix to keep you going through the week. You’ll also, in theory, have enough apples for three or four bowls if you don’t scoff the lot as I did…
