I have no idea how the summer has galloped away so quickly, how can it be September already?! My children are beginning to scatter to the winds, either to school or to Uni, and my thoughts are turning to autumn days and comfort foods. There’s not much that is more satisfying than simple vegetarian pasta dishes.

Eb at Easy Peasy Foodie offers us one of my favourite pasta dishes – the one I reach for midweek when I just want something delicious to be ready in minutes! Try Eb’s Gargano Pasta with Blue Cheese and Spinach this week, you won’t regret it!
Simple vegetarian pasta dishes can take just minutes to make and Monika at Everyday Healthy Recipes has Spaghetti with Parsley Avocado Pesto to tempt your taste buds – ready in the blink of an eye!
The Taste Space spices it up in time for cooler evenings with Noodles and Homemade Ginger Stir Fry Sauce coating her VIPs (Very Important Plants)!
Green Gourmet Giraffe has two comfort foods for the price of one and I am DEFINITELY putting this on my Autumn ‘Must Eat’ list – who could resist a Macaroni Cheese Pie?!
There’s even more comfort on offer from Touch Wood – her Pasta Fagioli marries homemade pasta flavoured with rosemary with a rich tomato and bean sauce, caraway and red pepper for a fabulous depth of flavour.
The Veg Hog celebrates the start of squash season with her Pasta with Spinach Pesto and Toasted Gem Squash – the rings look beautiful and a perfect supper to eat while celebrating the Paralympics which start in Rio tomorrow!
Sweet potatoes are one of my favourite things – I pop them into curries and pies all the time. Beth at Jam and Clotted Cream has whipped up this gorgeous Sweet Potato Macaroni Cheese with salty feta and smoked paprika – it has my tummy rumbling while I’m writing this!
Last but not least this month is a swansong for summer with Mummy Mishap’s Summer Minestrone Soup – packed full of seasonal vegetables and herbs it really is summer in a bowl.
