5 Simple Weeknight Pasta Dishes for #PastaPlease in November
November dawned all misty and murky here in Somerset after a glorious Samhain and Halloween weekend. We watched fireworks on Saturday, sailed on Sunday and climbed Glastonbury Tor on Monday. We shared the most glorious of sunsets, oohed and ahhed at rockets and fire and breathed the clear air of our beautiful county while we gazed across the Vale of Avalon. It was a weekend to recharge the soul and very much needed.
As October rolls into November I feel the need for quick comfort food. It’s the quiet before the storm of Christmas and simple weeknight pasta dishes, soups, stews and curries are in order. This month’s Pasta Please entries all fit my need for quick, satisfying meals made in minutes!
One pot pasta has to be the easiest supper, cooked in a flash and hardly any washing up – Hoorah! If you’re after something fast and filling Tinned Tomatoes simple Eat Your Greens One Pot Pasta needs to be top of your list!
Monika at Every Day Healthy Recipes uses seasonal butternut squash in her colourful, easy on the eye Butternut Squash Pasta with Rocket Leaves – who wouldn’t smile when this turned up on the autumn table?
Jenny at Mummy Mishaps has been experimenting with cheese and carrots and rustled up these Cheesy Courgette Carrot Balls to go with a tomato and pepper ragu spaghetti – such a lovely texture combination!
Another one pot meal is on offer this month from YumSome – a warm, filling Tuscan Bean Soup using any vegetables you have to hand and very useful for using up any left over broken bits of pasta from the bottom of packets apparently – which is fab!
Lisa’s Kitchen combines two of my favourite things in her entry this month – Creamy Vegan Cashew Alfredo Sauce and Crispy Roasted Brussels Sprouts with Pasta Shells. Seasonal, comforting, vegan and delicious!
That all has me sorted with simple weeknight pasta dishes for November – I can’t wait to see what people come up with next month, I’m really hoping for some Christmas pasta dishes!
