Well, it’s happened, we have two vegetarian students in the family. We have gone from a household of six to one of four as our second born has flown the nest and headed up North to Uni. Number one is in Berlin studying at Uni there on his year abroad so we are feeling a bit scattered, discombobulated and, well… Thinly Spread! When our eldest left two years ago I spent a lot of time on my phone sending him my recipes for vegetarian gravy, lasagna and various curries but this time I’ve decided that putting them all on here makes far more sense!

So – starting from this week I will be sharing my simplest vegetarian and vegan recipes every Wednesday. They are recipes which use very few ingredients, take no more than 30 minutes to make, don’t cost a fortune and will fill tummies nicely. I will also be sharing the tips and tricks my boys have picked up as they learn to fend for themselves. These are recipes for busy people, people who haven’t got time or inclination to run up a roulade or whip up a five course dinner. They are also useful recipes for those who are new to vegetarian and vegan cooking, for those who have a new convert to meat free food in their households and for those who just want something simple and meat free every now and again.

My eldest is vegan and his younger brother is vegetarian – they’ve both been veggie since birth. This new series will include recipes to suit both of them so there will be plant based student recipes as well as some with dairy and eggs but I will be setting up a category for each to ensure they are easy to find.

In the meantime – here is a handful of simple vegetarian recipes already here on Thinly Spread to get the ball rolling.
