Strawberry Lemonade

An easy recipe for Strawberry Lemonade. Fruity and refreshing, it needs only four ingredients to make. Add ice cubes and a sprig of mint for a taste of summer, in a glass!

Ingredients

  • 6 - 8 lemons you may need more or less, you need 200ml lemon juice
  • 50 g granulated sugar
  • 250 g strawberries
  • water

Instructions

  • Use a peeler to strip the peel of two of the lemons, avoiding the white pith.
  • Add the peel to a pan with the sugar and pour over 500ml (2 cups) of boiling water. Stir to dissolve the sugar and leave to cool.
  • Juice the lemons and strain through a sieve to remove any pips. You need about 200ml (3/4 cup) lemon juice.
  • Hull the strawberries (remove leaves nad stalk) and puree until smooth in a food processor.
  • Push the strawberries through a fine sieve to remove the seeds.
  • Remove the lemon strips from the cooled sugar syrup. Mix together with the lemon juice and strawberry puree.
  • Add 1 litre of water or more to taste until you are happy with your lemonade strength. 
  • Chill and serve cold with ice.
