This super easy Strawberry Lemonade recipe is the perfect summer drink and only needs three ingredients plus water to make! Add ice cubes and a sprig of mint and you’ve got summer, in a glass!

I made a huge jug full of delicious strawberry lemonade yesterday and served it up for afternoon tea with vegan scones, fresh from the oven, strawberry jam and cream. 

I fully expected to have an ice-cold glass of it to sip on as I wrote this post this morning. This has not happened.

When you have a 16-year-old on their long summer holiday nothing can be left in the fridge unattended. He drank the lot last night after I had gone to bed and all that remained this morning was an empty jug of disappointment. It’s a good job I love him!

Strawberry Lemonade

Strawberry lemonade is a delicious combination of sweet summer berries and tart citrussy lemons. It is a marriage made in heaven! 

Making your own lemonade means that you can decide how much sugar goes into it. There are no preservatives or additives just fresh fruit, water and a little sugar. If you have never tried making your own, and are used to sweet, shop-bought fizzy stuff, this is going to really surprise you!

Everything in this drink is about fruity flavours and it is based on the traditional lemonade that made its first appearance in Europe in 1630 but with added strawberries.

Strawberry Lemonade Ingredients

  • Fresh or Frozen Strawberries – fresh strawberries are my preference but frozen will work here as you will be pulping them.
  • Lemons – you’ll need 6-8 depending on how large and juicy they are. I had a couple of slightly shrivelled little lemons from the back of the fridge so I needed 8 for this batch!
  • Sugar – I don’t like sweet drinks so I use very little sugar. If you prefer it on the sweet side add a little more when you are making the sugar syrup or stir in some maple syrup to taste. 
  • Water –  I use tap water, use filtered if you prefer or sparkling if you want some fizz. Add more water if you like a lighter drink or you want to make it go further. 
  • Mint (optional) – a sprig of mint in each glass looks pretty and mint goes so well with both lemons and strawberries.

How To Make It

  • Make a lemon sugar syrup – use a peeler to strip the peel of two lemons. You don’t need the white pith which is bitter so make sure you are only peeling the zesty outer layer. Add this to a pan along with 50g granulated sugar and pour over 500ml of boiling water. Stir to dissolve the sugar and leave to cool.
  • Juice the lemons – and strain through a sieve to remove any pips.
  • Prepare the strawberries – hull the fruit (remove the green leaves and stalk) and puree until smooth in a food processor. If you haven’t got a processor mash them well with a fork or potato masher. Push it through a fine sieve into a bowl to remove the seeds.
  • Combine it all together – remove the lemon strips from the cooled sugar syrup and mix it together with the lemon juice and strawberry puree.  Add 500ml of water or more to taste until you are happy with your lemonade strength. 
  • Chill – serve cold with ice and mint sprigs.
  • Enjoy!

Make Ahead and Freezing Instructions

  • Make Ahead – if you want to make this ahead of time it can be stored, covered in the fridge for about 5 days.
  • To Freeze – combine the cooled sugar syrup with the lemon juice and strawberry puree and freeze in a suitable container for up to 4 months. Allow the mixture to thaw and add water to taste.

An easy recipe for Strawberry Lemonade. Fruity and refreshing, it needs only four ingredients to make. Add ice cubes and a sprig of mint for a taste of summer, in a glass!

Ingredients

  • 6 - 8 lemons you may need more or less, you need 200ml lemon juice
  • 50 g granulated sugar
  • 250 g strawberries
  • water

Instructions

  • Use a peeler to strip the peel of two of the lemons, avoiding the white pith.
  • Add the peel to a pan with the sugar and pour over 500ml (2 cups) of boiling water. Stir to dissolve the sugar and leave to cool.
  • Juice the lemons and strain through a sieve to remove any pips. You need about 200ml (3/4 cup) lemon juice.
  • Hull the strawberries (remove leaves nad stalk) and puree until smooth in a food processor.
  • Push the strawberries through a fine sieve to remove the seeds.
  • Remove the lemon strips from the cooled sugar syrup. Mix together with the lemon juice and strawberry puree.
  • Add 1 litre of water or more to taste until you are happy with your lemonade strength. 
  • Chill and serve cold with ice.
