Carrot Cake Recipe

C is for Carrots coincided very handily with my daughter’s 15th birthday and her request for carrot cake, hoorah! Bonus Boy and I set to work sifting, grating, mixing and baking to make one of our family favourites. My lot don’t like creamy toppings so we drizzled the top with lemon glacé icing, covered it with candles, stuck a sparkler in the middle and everyone was very happy!

Carrot Cake Recipe – Cooking With Kids

Ingredients

  • 285g Plain Flour
  • 2 teaspoons bicarbonate of soda
  • 2 teaspoons ground cinnamon
  • 2 teaspoons vanilla essence
  • 225g golden caster sugar
  • 3 eggs
  • 225g lightly salted butter
  • 225g carrots

Instructions

  1. Preheat your oven to 170°C/Gas Mark 3
  2. Grease and line a 2lb loaf tin with baking parchment
  3. Melt the butter and leave to cool
  4. Grate the carrots
  5. Sift the flour, bicarbonate of soda and cinnamon into a large mixing bowl, add the sugar
  6. Whisk the eggs together with the cooled butter and the vanilla
  7. Pour the egg mixture into the flour mixture and combine thoroughly
  8. Stir in the carrots and spoon into your tin
  9. Bake for about 11/2 hours or until the top springs back when you press it lightly with your finger
  10. Leave to cool in the tin for 5 minutes before turning onto a wire rack to cool completely

If you want to top your cake with lemon glacé icing you will need about 3 tablespoonfuls of icing sugar mixed with a tablespoonful or so of freshly squeezed lemon juice. Mix it together until you get a drizzling consistency and then just dribble it willy nilly over the top of your cooled cake (don’t do it when it’s hot or it will just drizzle off completely!).

All that remained for us to do was to find space for FIFTEEN candles and a sparkler and place it in front of our girl while we all sang loudly and pretty tunelessly to wish her a Happy Birthday – can anyone sing Happy Birthday sweetly?!
