We, along with several other bloggers, are sharing our kid friendly cooking recipes and tips to get everyone Cooking with Kids! Today it’s the turn of C is for Carrots with our well worn recipe for Carrot Cake. To see all the carrot recipes from my fellow bloggers click on the links at the bottom of this post.
C is for Carrots coincided very handily with my daughter’s 15th birthday and her request for carrot cake, hoorah! Bonus Boy and I set to work sifting, grating, mixing and baking to make one of our family favourites. My lot don’t like creamy toppings so we drizzled the top with lemon glacé icing, covered it with candles, stuck a sparkler in the middle and everyone was very happy!
If you want to top your cake with lemon glacé icing you will need about 3 tablespoonfuls of icing sugar mixed with a tablespoonful or so of freshly squeezed lemon juice. Mix it together until you get a drizzling consistency and then just dribble it willy nilly over the top of your cooled cake (don’t do it when it’s hot or it will just drizzle off completely!).
All that remained for us to do was to find space for FIFTEEN candles and a sparkler and place it in front of our girl while we all sang loudly and pretty tunelessly to wish her a Happy Birthday – can anyone sing Happy Birthday sweetly?!
