The summer holidays are finally here and it’s sailing time at last! Pasta has to be one of the easiest things to cook on board so it pops up in many guises! One Pot Pasta Puttanesca is a particular favourite as it’s so simple to make (and doesn’t require me to deal with vast quantities of boiling water while we bounce across the waves) and Baked Pasta with Spinach and Eggs is always a hit at the end of a long day’s sail.

Pasta Please has been an inspiration again this month and I’m sure one or two of these fabulous easy pasta recipes will be popping up as we meander down the coast of Devon and Cornwall!
Thank you so much to those of you who joined in! If you’d like to join in next month just follow the instructions at the end of this post.
The Veg Hog has me licking my lips and firing up my burners with her offering this month. Just look at these amazing Chilli Cheese Macaroni Bites!

I am totally addicted to beetroot and have been adding it all over the place each time it pops up in my veg box – it pairs fantastically with feta so this recipe for Baked Beetroot with Feta and Orzo from Everyday Healthy Recipes definitely has my name on!

Shaheen at Allotment to Kitchen shared her Buckwheat Soba Noodles Drowning in Miso and Greens this month – another super simple, filling and delicious one pot meal!

Foodie Quine is also keeping it simple, Italian style, and taking it back to basics with her Spinach and Ricotta Tortellini with Butter and mint Sauce – this one will definitely be making an appearance in the cockpit!

And last, but very definitely not least, this month A Virtual Vegan’s show stopping Vegan Carbonara with Smoky Carrot Rashers! Just gaze and drool for a bit – then go and make it AT ONCE!

I hope you enjoyed this summery selection of easy pasta recipes. I think it shows just how varied and interesting vegetarian pasta recipes can be.

Thank you for the nice round up! So many tasty recipes, I can’t wait to have pasta again. Have fun sailing! 🙂
