Vegan Toffee Popcorn with dried apple pieces – just look at it up there – sweet, crispy and chewy, all at the same time!
It went down very well as we curled up on Sunday evening with the wood burner blazing and Harry Potter on the TV.
In theory, this recipe makes enough for 8 cones of toffee apple popcorn for your Halloween Party or Bonfire Knees Up – in practice 4 of us ate the lot.
Pretty rapidly.
It was a bit unseemly if I’m honest.
We pretended we were checking and double-checking that the recipe worked but we could tell that it did from the first bite. We were trying it on quite frankly!
The sparklers and popcorn made for such lovely pictures and really put us in the mood for all upcoming festivals of light!
Homemade Popcorn – Tips and Tricks
If you haven’t popped your own corn before I would really urge you to have a go – it’s super simple and it can be a really healthy snack.
You can buy popping corn in most supermarkets and whole food stores.
A little goes a long way and it is MUCH cheaper than buying bags of ready-popped corn!
- Heat the oil in a heavy-bottomed saucepan over medium heat.
- When the oil is hot, add the popping corn kernels. They should sizzle when they hit the oil.
- Immediately cover the pan with a lid and don’t be tempted to take it off again until the popping slows down – a glass lid is a really good idea!
- Shake the pan every now and again to prevent the corn from burning.
- The popping will be mad for a minute or two and then slow as the pan fills with popped corn.
- Once it has stopped popping remove it from the heat, tip it into a large bowl and add your flavourings.
Toffee popcorn can’t really claim to be healthy but if you leave out the sugar and add simple flavourings like chilli, cinnamon, sumac or black pepper you have an easy after-school vegan snack, ready in minutes.
Popping Corn with Children
If you are popping corn with children I would really recommend a pan with a see-through lid so they can see the popping in action – do be careful with small children and hot pans though, obviously!
Making Vegan Toffee Sauce
Vegan toffee sauce is made in exactly the same way as its dairy-based alternative.
Simply use your favourite vegan butter and heat it gently in a small saucepan along with golden syrup, vanilla extract and a little cinnamon.
Stir occasionally until it is all melted together.
If you are making toffee apple popcorn add the chopped dried apple pieces to the melted mixture and pour it over the cooked popcorn.
Stir it a bit as it cools to stop clumps from forming.
