I’ve been exploring recipes using the Quorn vegetarian and vegan Deli Range as I gear up for the party season here on Thinly Spread and today I am sharing a super easy recipe using Quorn Roast Beef Style Slices.
Quorn Roast Beef Style Slices in Mini Pitta Pockets
Quorn Deli Slices are ideal for simple vegan recipe-making over the festive season.
Here I’ve sliced them into triangles and popped them into mini pitta pockets along with balsamic caramelised onions, grain mustard and slices of tomato and cucumber.

These little mouthfuls are absolutely delicious and are sure to be a hit with all your guests. This batch lasted for about ten minutes once my hungry teen arrived home from school!

These Deli slices lend themselves to all sorts of simple recipes, try them:
- on a bagel with lettuce and vegan cream cheese
- in a wrap with horseradish, cucumber and crunchy radishes

Make this recipe even simpler by:
- Buying caramelised onions in jars from your favourite supermarket or deli counter, who knew?!
- Using regular-sized pockets cut into quarters if you can’t find mini pittas
Mini Pittas with Quorn Roast Beef Style Slices, Mustard and Caramelised Onions
Ingredients
- 6 slices Quorn Roast Beef Style Slices
- 15 mini pitta
- 1 tbsp olive oil
- 2 large onions
- pinch of salt
- 1 tbsp balsamic vinegar
- 1 tsp dark brown sugar
- 2 tbsp wholegrain mustard
- 1 large tomato
- 1/4 cucumber
Instructions
- Peel the onions, halve and slice thinly.
- Cut the Quorn Roast Beef Style slices into quarters and then each quarter in half to give you 48 little triangles.
- Heat the oil in a large, heavy-bottomed frying pan. Add the onions and a pinch of salt and cook on low to medium heat, stirring gently occasionally. If the onions stick, add a splash of water to deglaze the pan. Do allow the onions to brown gently.
- Keep stirring occasionally until the onions are very soft and gently browned.
- After about 20 minutes of cooking add the sugar and balsamic vinegar and cook for a further 10 minutes. Allow to cool.
- Toast the mini pittas in a medium oven for about 5 minutes (or according to packet instructions) until puffed. Split each one open.
- Stuff each pitta with 3 triangles of Quorn Roast Beef style slices, a slice of tomato, a slice of cucumber, a spoonful of caramelised onion and mustard to taste.
- Serve and Enjoy!
